🥗 Spinach & Feta Egg White Omelette with Avocado Salad

For the Omelette:

  • 4 egg whites

  • 1/2 cup fresh spinach (chopped)

  • 2 tablespoons crumbled feta cheese

  • Salt & pepper to taste

  • Mixed seeds (optional: sesame, flax, chia)

  • A few drops of hot sauce (optional)

  • 1 tsp olive oil or cooking spray

For the Avocado Salad:

  • 1 ripe avocado, sliced

  • A handful of mixed salad greens (spinach, arugula, lettuce)

  • 1 tbsp crumbled feta cheese

  • Mixed seeds for topping

  • Hot sauce (optional)


👩‍🍳 Instructions:

1. Make the Omelette:

  • Heat a non-stick pan over medium heat and lightly grease with olive oil or cooking spray.

  • Add chopped spinach and sauté for about 1 minute until slightly wilted.

  • Pour in egg whites and let them cook until mostly set.

  • Sprinkle feta cheese, salt, and pepper on top.

  • Gently fold the omelette in half and cook for another minute.

  • Transfer to a plate and drizzle with hot sauce and sprinkle seeds if desired.

2. Prepare the Salad:

  • Arrange the mixed greens on the plate.

  • Add the sliced avocado on top.

  • Sprinkle with feta cheese and mixed seeds.

  • Drizzle with hot sauce (optional).


Tips:

  • You can add other veggies like mushrooms or bell peppers inside the omelette.

  • For extra protein, add grilled chicken or tofu on the salad side.
