A Creamy, Tropical Delight with a Zesty Twist!
This creamy coconut chia pudding is layered with sweet, juicy mango and topped with toasted coconut and lime zest for a refreshing tropical dessert or healthy breakfast.
Ingredients:
For the Chia Pudding:
1 cup coconut milk (full-fat for creaminess)
1/2 cup unsweetened almond milk
1/4 cup chia seeds
2 tbsp maple syrup (or honey)
1/2 tsp vanilla extract
Pinch of salt
For the Mango Layer:
2 ripe mangoes, diced
1 tbsp lime juice
1 tbsp honey (optional)
For Topping:
2 tbsp toasted coconut flakes
1 tsp lime zest
Instructions:
1. Prepare the Chia Pudding
In a mixing bowl, whisk together coconut milk, almond milk, chia seeds, maple syrup, vanilla, and salt.
Let it sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 4 hours or overnight until thickened.
2. Make the Mango Layer
In a bowl, toss diced mangoes with lime juice and honey (if using).
3. Assemble & Serve
Spoon chia pudding into serving glasses, filling halfway.
Add a generous layer of mango mixture on top.
Garnish with toasted coconut flakes and lime zest.
