Strawberry, Pistachio & Shortbread Tartare

Ingredients:

For the Tartare:

  • 400g fresh strawberries, hulled and finely diced

  • 2 tablespoons sugar

  • Juice of 1 lemon

  • 50g shelled pistachios, crushed

For the Shortbread Cookies:

  • 100g butter

  • 100g sugar

  • 1 egg

  • 200g flour

  • 1/2 packet baking powder

  • A pinch of salt

Instructions:

1.  Prepare the Tartare:

In a mixing bowl, combine the finely diced strawberries with sugar and lemon juice. Gently mix to coat the strawberries evenly, then set aside for about 10-15 minutes to allow the flavors to blend.

2.  Prepare the Shortbread Cookies:

  • Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
  • In a bowl, cream the butter and sugar together until light and fluffy.
  • Beat in the egg until well incorporated.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture and mix until a dough forms.
  • Roll the dough into small balls and place them on the prepared baking sheet, pressing each slightly with a fork to flatten them.
  • Bake in the preheated oven for 12-15 minutes or until the edges are golden brown. Let them cool completely.

3.  Assemble the Tartare:

  • Once the shortbread cookies are cooled, break them into small crumbs.
  • To assemble, layer the strawberry mixture in serving bowls or glasses, sprinkle crushed pistachios on top, and then add the shortbread cookie crumbs for crunch.

4.  Serve and Enjoy:

Garnish the tartare with additional crushed pistachios and serve immediately, or refrigerate for 30 minutes before serving for a chilled treat.
