Ingredients

For the Sugar Cookies:

  • 2 ½ cups all-purpose flour

  • ½ teaspoon baking powder

  • ¼ teaspoon salt

  • ¾ cup unsalted butter, softened

  • ¾ cup granulated sugar

  • 1 large egg

  • 1 ½ teaspoons vanilla extract

Instructions

1.  Prepare the Dough:
In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the egg and vanilla extract, and mix until combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

2.  Chill the Dough:
Divide the dough into two portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

3.  Roll and Cut:
Preheat the oven to 350°F (175°C). On a lightly floured surface, roll out one disk of dough to about ¼ inch thickness. Use bunny-shaped cookie cutters to cut out shapes and place them on a parchment-lined baking sheet.

4.  Bake:
Bake the cookies for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

5.  Decorate:
Once cooled, decorate with pastel royal icing of your choice. Let the icing dry completely before storing or serving.
