Burrata & Caramelized Peach Skewers with Basil Oil

Ingredients (Serves 4)

For the Skewers:

  • 2 ripe peaches, halved, pitted, and sliced into thick wedges

  • 1 tablespoon honey or maple syrup

  • 1 tablespoon olive oil

  • A pinch of sea salt

  • 1 ball of Burrata cheese (about 200g)

  • 8–10 fresh basil leaves

  • Freshly ground black pepper, to taste

  • Optional: prosciutto slices for extra flavor

For the Basil Oil:

  • ½ cup fresh basil leaves

  • ¼ cup extra virgin olive oil

  • 1 small garlic clove, crushed (optional)

  • A pinch of sea salt

  • A squeeze of lemon juice (optional for brightness)

Instructions

Step 1: Make the Basil Oil

1.  Bring a small pot of water to a boil.

2.  Blanch basil leaves for 10 seconds, then transfer immediately to ice water to preserve their bright color.

3.  Pat dry and blend with olive oil, salt, and (optional) garlic until smooth.

4.  Strain through a fine sieve for a clear, vibrant green oil.

5.  Set aside.

Step 2: Caramelize the Peaches

1.  In a small bowl, mix the peach wedges with honey and olive oil until lightly coated.

2.  Heat a grill pan or skillet over medium heat.

3.  Grill the peaches for 2–3 minutes per side, until slightly charred and caramelized.

4.  Sprinkle with a pinch of sea salt to enhance sweetness.

5.  Let cool slightly.

Step 3: Assemble the Skewers

1.  Cut the Burrata gently into bite-size pieces (be careful — it’s creamy inside).

2.  On each skewer, layer a basil leaf, a piece of Burrata, and a caramelized peach wedge.

3.  Repeat until all ingredients are used.

4.  Optionally, wrap a small strip of prosciutto around the Burrata for a savory twist.

Step 4: Drizzle and Serve

1.  Arrange the skewers on a serving plate.

2.  Drizzle generously with basil oil and a few drops of balsamic glaze if desired.

3.  Finish with freshly cracked black pepper and a sprinkle of sea salt flakes.
