Instructions

2. Blanch basil leaves for 10 seconds, then transfer immediately to ice water to preserve their bright color.
3. Pat dry and blend with olive oil, salt, and (optional) garlic until smooth.
4. Strain through a fine sieve for a clear, vibrant green oil.
5. Set aside.
Step 2: Caramelize the Peaches
1. In a small bowl, mix the peach wedges with honey and olive oil until lightly coated.
2. Heat a grill pan or skillet over medium heat.
3. Grill the peaches for 2–3 minutes per side, until slightly charred and caramelized.
4. Sprinkle with a pinch of sea salt to enhance sweetness.
5. Let cool slightly.
Step 3: Assemble the Skewers
1. Cut the Burrata gently into bite-size pieces (be careful — it’s creamy inside).
2. On each skewer, layer a basil leaf, a piece of Burrata, and a caramelized peach wedge.
