3-Layer Burrata & Beet Sweet Potato Stacks

Ingredients

For the roasted layers:

  • 2 medium sweet potatoes, peeled and sliced into 1 cm (½ inch) thick rounds

  • 2 medium beets, cooked and sliced into rounds

  • 2 tbsp olive oil

  • Salt & freshly ground black pepper, to taste

For the cheese layer:

  • 2 balls of burrata cheese (or fresh mozzarella if unavailable)

For the dressing:

  • 2 tbsp balsamic glaze (or reduction)

  • 1 tbsp extra-virgin olive oil

  • 1 tsp honey

  • 1 tsp lemon juice

  • Pinch of sea salt

For garnish:

  • Fresh basil leaves or microgreens

  • Crushed pistachios or walnuts (optional, for crunch)

Instructions

1. Roast the sweet potatoes

  1. Preheat your oven to 200 °C / 400 °F.

  2. Arrange the sweet-potato slices on a parchment-lined baking tray.

  3. Brush with olive oil and season with salt and pepper.

  4. Roast for 20–25 minutes, flipping halfway through, until tender and slightly caramelized.

2. Prepare the beets

  • If using raw beets, wrap them in foil and roast for 40–45 minutes, then peel and slice.

  • If using pre-cooked beets, simply slice them into even rounds and pat dry.

3. Make the dressing

Whisk together balsamic glaze, olive oil, honey, lemon juice, and sea salt until smooth. Adjust sweetness or acidity to taste.

4. Assemble the stacks

For each serving:

  1. Place one sweet-potato slice at the base.

  2. Add one beet slice on top.

  3. Spoon a piece of burrata over the beet.

  4. Repeat for three layers, ending with a dollop of burrata on top.

5. Finish and serve

  • Drizzle the balsamic dressing generously over the stacks.

  • Garnish with fresh basil, microgreens, and a sprinkle of crushed pistachios for extra texture.

Serve immediately while the sweet potatoes are still warm and the burrata is creamy and soft.
