Ingredients

  • 1 wheel (about 8 oz / 225 g) Brie cheese

  • 3–4 fresh figs, sliced (or use dried figs, rehydrated)

  • 2 tbsp honey, plus extra for drizzling

  • ¼ cup chopped pecans (toasted for deeper flavor)

  • 1 tsp fresh rosemary leaves (optional, for aroma)

  • Crackers or sliced baguette, for serving

Instructions

1. Preheat the oven

  • Set your oven to 180°C / 350°F.

  • Line a small baking sheet with parchment paper.

2. Prepare the Brie

  • Place the Brie wheel on the parchment.

  • If you prefer, lightly score the top rind in a crisscross pattern to help the honey and figs soak in.

3. Add toppings

  • Arrange the sliced figs on top of the Brie.

  • Sprinkle over the toasted pecans and rosemary (if using).

  • Drizzle with honey generously.

4. Bake

  • Place in the oven and bake for 12–15 minutes, until the Brie is soft and gooey but not collapsed.

  • You’ll know it’s ready when the center feels soft to the touch.

5. Serve

  • Carefully transfer the Brie to a serving plate.

  • Drizzle with a little extra warm honey and a few fresh rosemary sprigs for garnish.

  • Serve immediately with crackers, toasted baguette slices, or apple wedges.
