Strawberry Cheesecake Cupcakes



Delicious and creamy treats that are perfect for any occasion!

Ingredients:

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup strawberries, chopped
- Whipped cream for topping
- Additional strawberries for garnish

Instructions:

1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
2. In a medium bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of each cupcake liner.
3. In a large bowl, beat the cream cheese, sugar, and vanilla until smooth. Add the eggs one at a time, mixing until fully incorporated.
4. Gently fold in the chopped strawberries.
5. Pour the cheesecake batter over the crusts in the cupcake liners until they are about 2/3 full.
6. Bake for 20-25 minutes, or until the edges are set and the centers are slightly jiggly.
7. Let the cupcakes cool, then refrigerate for at least 2 hours.
8. Top with whipped cream and additional strawberries before serving. Enjoy!
