Creamy Spinach-Stuffed Salmon with Garlic Shrimp & Asparagus



A rich, elegant, restaurant-style dish that’s surprisingly easy to make — tender salmon stuffed with creamy spinach, topped with juicy garlic shrimp, and served with roasted asparagus and rice.


Ingredients

Stuffed Salmon

  • 2 salmon fillets

  • 1 cup fresh spinach, chopped

  • 3 tbsp cream cheese

  • 2 tbsp grated Parmesan

  • 1 garlic clove, minced

  • 1 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp lemon pepper

  • Salt & pepper

Garlic Shrimp Topping

  • 1 cup shrimp, peeled & deveined

  • 1 tbsp butter

  • 1 garlic clove, minced

  • ½ tsp paprika

  • Pinch of parsley

  • Salt & pepper

Sides

  • 1 cup cooked white rice

  • 8–10 asparagus spears

  • 1 tbsp olive oil

  • Salt & pepper




Directions

Prepare the Creamy Filling

  • Mix spinach, cream cheese, Parmesan, garlic, salt, and pepper until creamy.

Stuff the Salmon

  • Slice a pocket into each salmon fillet.

  • Fill generously with the spinach mixture.

Cook the Salmon

  • Season outside with paprika, lemon pepper, salt, and pepper.

  • Heat olive oil in a pan and sear the salmon 3–4 minutes per side until golden and cooked through.

Make the Garlic Shrimp

  • In another pan, melt butter.

  • Add garlic, shrimp, paprika, and salt.

  • Cook 3–4 minutes until pink and juicy.

  • Sprinkle parsley.

Roast the Asparagus

  • Toss asparagus with olive oil, salt, and pepper.

  • Roast at 200°C (400°F) for 10–12 minutes.

Assemble

  • Plate the stuffed salmon, spoon the garlic shrimp on top, and serve with rice and asparagus.
