Creamy Mango Coconut Pudding



Ingredients:
  • 2 ripe mangoes, peeled and cubed
  • 1 cup coconut milk
  • 1/4 cup honey or maple syrup
  • 1/2 cup water
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Fresh mango slices or shredded coconut for garnish (optional)
Instructions:

1. Blend the mango cubes until smooth and set aside.
2. In a saucepan, combine the coconut milk, water, cornstarch, honey, vanilla extract, and salt. Whisk until smooth.
3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken.
4. Add the mango puree and continue to stir for another 2–3 minutes until fully thickened.
5. Remove from heat and pour the pudding into serving bowls or glasses.
6. Let it cool at room temperature, then chill in the refrigerator for at least 2 hours.
7. Garnish with mango slices or shredded coconut before serving if desired.
