Cranberry & Spinach Stuffed Chicken Breasts with Brie
These Cranberry & Spinach Stuffed Chicken Breasts with Brie are a delightful combination of savory, tangy, and creamy flavors. The chicken is stuffed with a rich mixture of spinach, cranberries, and creamy brie cheese, then drizzled with a sweet and tangy balsamic honey glaze. It's the perfect dish for a special dinner, elegant yet easy to prepare.
4 boneless, skinless chicken breasts
1/2 cup fresh spinach, chopped
1/3 cup dried cranberries
4 oz brie cheese, sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons honey
1 tablespoon balsamic vinegar
1/4 teaspoon Dijon mustard
Preheat your oven to 375°F (190°C).
Use a sharp knife to cut a pocket into each chicken breast. Be careful not to cut all the way through.
Season both sides of the chicken breasts with garlic powder, thyme, salt, and black pepper.
In a small bowl, mix together the chopped spinach and dried cranberries.
Stuff each chicken breast with a generous portion of the spinach and cranberry mixture.
Add slices of brie cheese inside the pocket, layering them on top of the spinach and cranberries.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Once the oil is hot, carefully add the stuffed chicken breasts to the skillet. Sear the chicken for about 3-4 minutes on each side, until golden brown.
Once the chicken is seared, transfer the skillet to the preheated oven. Bake the chicken for 20-25 minutes, or until the internal temperature reaches 165°F (74°C), and the cheese is melted and bubbly.
While the chicken is baking, make the glaze. In a small saucepan, combine honey, balsamic vinegar, and Dijon mustard. Heat over medium heat, stirring occasionally, until the mixture comes to a simmer. Allow it to cook for 2-3 minutes, until it thickens slightly.
Once the chicken is cooked, remove it from the oven and let it rest for a few minutes.
Drizzle the balsamic honey glaze over the chicken before serving. You can garnish with extra cranberries, spinach, or a sprig of thyme for added color and flavor.
Chicken: If you’re concerned about overcooking the chicken, you can check the internal temperature with a meat thermometer. The chicken is done when it reaches 165°F (74°C).
Cheese: Brie is ideal for this recipe due to its creamy texture, but you can substitute with other soft cheeses like goat cheese or cream cheese if you prefer.
Glaze: Adjust the sweetness of the glaze by adding more honey if desired, or balance it with a little extra mustard for a sharper flavor.
The Cranberry & Spinach Stuffed Chicken Breasts with Brie offer a perfect combination of savory, sweet, and creamy flavors. The chicken is juicy and tender, stuffed with the richness of brie, the earthiness of spinach, and the sweetness of cranberries. The balsamic honey glaze adds a delightful tang that perfectly complements the dish, making it ideal for a special dinner or even holiday gatherings.
