
I make this veggie casserole every weekend! Delicious recipe for cauliflower with broccoli!
Ingredients:

4 potatoes, peeled and diced

1 broccoli, cut into florets

2 teaspoons salt, divided

1 onion, chopped

1 carrot, peeled and diced

Olive oil, for drizzling
Instructions:

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Vegetables:

Peel and dice the potatoes.

Cut the broccoli into florets.
-
Peel and dice the carrot.
-
Chop the onion.

Cook the Vegetables:

Bring a large pot of water to a boil. Add 1 teaspoon of salt to the water.

Add the diced potatoes and cook for 5-7 minutes until they are just tender.

Add the broccoli and carrot, and cook for another 5 minutes until the broccoli is tender but still bright green.

Drain the vegetables and set them aside.

Sauté the Onion:

In a pan, heat a small amount of olive oil over medium heat.

Add the chopped onion and sauté for 3-4 minutes until softened and slightly caramelized.

Assemble the Casserole:

In a baking dish, combine the cooked potatoes, broccoli, carrots, and sautéed onion.

Drizzle with olive oil and sprinkle with the remaining 1 teaspoon of salt. Toss everything together to evenly coat the vegetables.
