Ingredients:

For the Ribeye Steak Bites:

  • 1 lb ribeye steak, cut into bite-sized cubes 🥩

  • Salt and black pepper, to taste 🧂

  • 1 tbsp olive oil 🫒

  • 2 tbsp butter 🧈

  • 3 cloves garlic, minced 🧄

  • 1 tsp fresh rosemary or thyme, chopped (optional) 🌿

  • 1 tbsp soy sauce (optional, for extra flavor) 🍜

For the Cheesy Smashed Potatoes:

  • 2 lbs baby potatoes or Yukon Gold potatoes 🥔

  • 1/2 cup milk 🥛

  • 4 tbsp butter 🧈

  • 1 cup shredded cheddar cheese 🧀

  • Salt and pepper, to taste 🧂

  • 1/4 cup sour cream (optional) 🥄

  • 1/4 cup green onions or chives, chopped (optional, for garnish) 🌱

Instructions:

1. Prepare the Potatoes:

  • Start by boiling the baby potatoes or Yukon Gold potatoes in a large pot of salted water. Cook them until they are fork-tender, which should take about 15-20 minutes.

  • Once the potatoes are cooked, drain them and return them to the pot.

  • Using a potato masher, gently smash the potatoes until they are lightly crushed but still in chunky pieces. The more rustic, the better!

2. Make the Cheesy Smashed Potatoes:

  • Add the butter, milk, and shredded cheddar cheese to the smashed potatoes while they’re still warm. Stir everything together until the cheese has melted and the mixture becomes creamy.

  • Season with salt and pepper to taste, and if you like, add a dollop of sour cream for extra creaminess. Mix well to combine.

  • For a touch of color and freshness, you can also sprinkle chopped green onions or chives over the top as a garnish.

  • Set the mashed potatoes aside to keep warm while you prepare the steak.

3. Prepare the Ribeye Steak Bites:

  • Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the ribeye steak cubes to the skillet in a single layer. Season the steak with salt and black pepper to taste.

  • Sear the steak bites for about 2-3 minutes per side, or until they develop a nice brown crust. Depending on your steak's thickness, you can adjust the cooking time for your preferred level of doneness.

  • Once the steak bites are seared, remove them from the skillet and set them aside. Reduce the heat to medium-low.

4. Flavor the Steak Bites:

  • In the same skillet, add the butter and minced garlic. Stir the garlic around for about 30 seconds, until it becomes fragrant.

  • If you're using fresh rosemary or thyme, add it to the skillet at this point to infuse the flavors into the butter.

  • Add the soy sauce to the pan (optional), and then return the steak bites to the skillet. Stir the steak bites in the garlic butter sauce for about 2 more minutes, ensuring they are well-coated and juicy.

  • Taste and adjust the seasoning if necessary.

5. Serve the Dish:

  • Plate the cheesy smashed potatoes on a large serving dish or individual plates. Top with the ribeye steak bites, spooning some of the flavorful garlic butter sauce over the steak and potatoes.
