Instructions:
1. Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.
2. Prepare the honey mustard sauce:
In a small bowl, whisk together mustard, honey, olive oil, lemon juice, and minced garlic. Season with a pinch of salt and pepper.
3. Marinate the salmon:
Place the salmon fillets on the prepared baking tray. Brush the tops generously with the honey mustard mixture. Let sit for 10 minutes if time allows.
4. Prepare the asparagus:
On the same tray or a separate one, toss asparagus with olive oil, salt, and pepper. Spread into a single layer.
5. Roast everything:
Place both trays in the oven. Roast for 12–15 minutes, or until salmon flakes easily with a fork and asparagus is tender-crisp.
(If using only one tray, place salmon in the center and asparagus around it.)
6. Optional finish:
Sprinkle asparagus with grated parmesan and a little lemon zest before serving.
