Ingredients:
1 1/2 cups full-fat milk
1 1/2 cups heavy cream
1/2 cup sweetened condensed milk
1/4 cup sugar (adjust based on sweetness preference)
1/2 cup pistachios, chopped or ground (reserve some for garnish)
1 tsp cardamom powder
A few strands of saffron (optional, for extra flavor and color)
1 tbsp rose water or kewra water (optional for floral aroma)

Instructions:
Prepare the Milk Base:
In a heavy-bottomed saucepan, bring the full-fat milk to a boil over medium heat. Stir occasionally to avoid burning.
Once the milk starts to boil, lower the heat and simmer for about 10-12 minutes, stirring frequently to reduce it slightly.
Mix in the Other Ingredients:
Add the heavy cream, sweetened condensed milk, sugar, and cardamom powder to the milk. Stir well to combine and continue to cook for another 5-7 minutes.
If using saffron, soak the saffron strands in a tablespoon of warm milk and then add them to the milk mixture.
Add the chopped pistachios (reserve a few for garnishing) and cook for an additional 2-3 minutes. This allows the pistachios to infuse the milk with their flavor.
Cool and Prepare for Freezing:
Remove the mixture from the heat and let it cool down to room temperature.
Once cooled, pour the kulfi mixture into kulfi molds or small cups, making sure the pistachios are evenly distributed.
If desired, add a few drops of rose or kewra water for extra flavor.
Freeze the Kulfi:
Cover the molds with a plastic wrap or lids and freeze the kulfi for at least 6 hours or overnight until fully set and firm.
Serving:
To release the kulfi from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the kulfi out.
Garnish with extra chopped pistachios before serving.
