Suggested Meal Time: Light snack or afternoon tea.

Ingredients:
1 cucumber

8 slices of white or whole-wheat bread

4 oz (115g) cream cheese

2 tbsp butter, softened

1 tbsp fresh dill, chopped (optional)

Salt and pepper to taste

Lemon zest (optional)

Fresh parsley or dill for garnish (optional)

Instructions:
Prepare the Cucumber:

Wash the cucumber thoroughly. Slice it thinly, preferably using a mandoline slicer for even slices.

Sprinkle the cucumber slices with a pinch of salt and let them sit for about 10 minutes to draw out excess moisture. Pat them dry with a paper towel.

Prepare the Spread:

In a bowl, mix the cream cheese and softened butter until smooth and well combined.

Add chopped dill (if using), salt, pepper, and lemon zest (if desired) to the cream cheese mixture. Stir until evenly distributed.

Assemble the Sandwiches:

Spread a generous amount of the cream cheese mixture onto one side of each slice of bread.

Arrange the cucumber slices on top of the cream cheese on one slice of bread.

Place another slice of bread on top, cream cheese side down.

Cut and Serve:

Trim the crusts from the sandwich to make it neat, then cut the sandwich into halves or quarters.

Garnish with a sprig of fresh parsley or dill if desired.

Tips:
For an energy-efficient option, use a small food processor to mix the cream cheese and butter, which reduces the need for excessive stirring.

You can store leftover cucumber sandwiches in the fridge for up to 2 hours, but they are best served fresh.

Who Will Benefit:
This dish is ideal for people looking for a light snack or appetizer, especially those who want to enjoy a refreshing and healthy option. It’s also a great choice for vegetarians and those looking to add more vegetables to their diet.
