Creamy Garlic Butter Salmon Pasta

 

Ingredients:

  • 2 salmon fillets, cut into chunks

  • 8 oz fettuccine pasta

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp red pepper flakes (optional)

  • 1 tbsp lemon juice

  • Fresh parsley, chopped (for garnish)

Instructions:

1. Cook the Pasta:

  1. Bring a large pot of salted water to a boil.

  2. Add the fettuccine pasta and cook according to the package instructions (usually 8-10 minutes), until al dente.

  3. Drain the pasta and set aside, reserving about ½ cup of pasta water for later.

2. Cook the Salmon:

  1. Heat 2 tbsp olive oil in a large skillet over medium heat.

  2. Add the salmon chunks and cook for about 4-5 minutes on each side, or until the salmon is cooked through and golden brown.

  3. Remove the salmon from the skillet and set it aside.

3. Make the Creamy Garlic Butter Sauce:

  1. In the same skillet, melt 2 tbsp butter over medium heat.

  2. Add the minced garlic and sauté for 1-2 minutes, until fragrant, being careful not to burn the garlic.

  3. Pour in the heavy cream and bring it to a simmer. Stir occasionally for about 2-3 minutes to thicken the sauce.

  4. Add Parmesan cheese, salt, black pepper, and red pepper flakes (optional). Stir until the cheese is melted and the sauce is creamy.

4. Combine the Pasta and Salmon:

  1. Add the cooked pasta to the skillet and toss it in the creamy sauce until evenly coated.

  2. Add the salmon chunks back into the skillet, gently tossing to combine with the pasta and sauce.

  3. If the sauce is too thick, add a little bit of the reserved pasta water to reach your desired consistency.

5. Final Touches:

  1. Stir in 1 tbsp of lemon juice for a burst of freshness.

  2. Garnish with chopped fresh parsley.
