Ingredients:
-
8 oz cream cheese, softened
-
4 oz goat cheese, softened
-
1/4 cup dried cranberries, chopped
-
1/4 cup pistachios, chopped
-
1/4 cup dried figs, chopped
-
1 teaspoon honey or maple syrup
-
Additional cranberries, pistachios, and figs for coating
-
Crackers, fresh fruits, or veggies for serving
Instructions:
1. Prepare the Cheese Mixture:
In a medium bowl, combine the softened cream cheese and goat cheese. Use a hand mixer or a spoon to mix until smooth and well-blended.
2. Add the Mix-ins:
Stir in the chopped dried cranberries, pistachios, and dried figs. Add honey or maple syrup for a touch of sweetness and mix everything together until evenly combined.
3. Form the Cheese Log:
Transfer the cheese mixture to a sheet of plastic wrap or parchment paper. Shape it into a log by rolling the mixture into a cylinder shape. Wrap it tightly and refrigerate for at least 1-2 hours to firm up.
4. Coat the Cheese Log:
Once chilled, remove the cheese log from the wrap and roll it in additional chopped cranberries, pistachios, and figs to coat the outside.
5. Serve:
Place the finished cheese log on a serving platter with crackers, fresh fruits, or veggies. Slice and serve as an appetizer or snack.
