1 lb ground chicken
1/2 cup breadcrumbs
1 egg
2 cloves garlic, minced
1/4 cup onion, finely diced
1 tbsp ginger, minced
2 tsp curry powder
1/2 tsp cumin

1 can (14 oz) coconut milk
2 tbsp red curry paste
1 tbsp fish sauce
1 tbsp lime juice
1 tbsp brown sugar
1/4 cup cilantro, chopped (for garnish)
1 tbsp vegetable oil (for cooking)
In a large bowl, combine the ground chicken, breadcrumbs, egg, garlic, onion, ginger, curry powder, cumin, salt, and pepper.
Mix the ingredients until well combined. Form the mixture into small meatballs, about 1 to 1.5 inches in diameter. You should have about 20-24 meatballs, depending on size.
Heat the vegetable oil in a large skillet over medium heat.

Once the meatballs are coated in the sauce, remove the skillet from the heat.
Serve the meatballs over rice, noodles, or enjoy them on their own. Garnish with freshly chopped cilantro for added color and freshness.
