Chocolate Pot de Crèmes Recipe

Chocolate Pot de Crèmes are rich, smooth custards traditionally served in small ramekins or jars. This classic French dessert is made using a simple mixture of chocolate, cream, egg yolks, and sugar. The result is a dense, velvety treat that requires no flour or starch, relying instead on gentle cooking to thicken. Below is a clear and practical recipe for preparing Chocolate Pot de Crèmes.

Ingredients (Serves 4 to 6)

  • 6 oz (170 g) bittersweet or semisweet chocolate, finely chopped

  • 1 1/2 cups (360 ml) heavy cream

  • 1/2 cup (120 ml) whole milk

  • 4 large egg yolks

  • 3 tbsp (40 g) granulated sugar

  • 1/8 tsp salt

  • 1 tsp pure vanilla extract

Instructions

  1. Preheat Oven
Preheat the oven to 325°F (160°C). Arrange 4 to 6 small ramekins in a deep baking dish.

  2. Heat the Cream and Milk
In a medium saucepan over medium heat, combine the heavy cream and whole milk. Heat until the mixture just begins to simmer. Remove from heat and stir in the chopped chocolate until melted and smooth.

  3. Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks, sugar, and salt until well blended and slightly thickened.

  4. Temper the Eggs
Gradually pour the warm chocolate mixture into the egg yolks, whisking constantly to prevent curdling. Stir in the vanilla extract.

  5. Strain the Mixture
Strain the custard through a fine-mesh sieve into a measuring cup or bowl to remove any cooked egg bits and ensure a smooth texture.

  6. Pour and Bake
Divide the mixture evenly among the ramekins. Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins, creating a water bath.

  7. Bake the Custards
Carefully place the baking dish in the oven. Bake for 30 to 35 minutes, or until the edges are set and the centers still slightly wobble when shaken.

  8. Cool and Chill
Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 2 hours or until fully chilled.

Suggestions

Chocolate Pot de Crèmes can be served plain or with a dollop of whipped cream, a few berries, or a dusting of cocoa powder. They are best enjoyed chilled and stored in the refrigerator for up to 3 days.

Notes

  • For deeper flavor, use high-quality chocolate with at least 60% cocoa content.

  • To vary the flavor, you can infuse the cream with ingredients like espresso, orange zest, or chili before mixing with chocolate.

  • Avoid overbaking to maintain a creamy consistency. The custards will continue to firm up as they cool.

This method yields a smooth, thick dessert that emphasizes chocolate as the primary flavor and showcases a classic custard preparation.
