Ingredients:

  • 1.5 quarts (about 1.4 liters) chocolate ice cream, slightly softened

  • 1.5 quarts (about 1.4 liters) blackberry ice cream or frozen yogurt, slightly softened

  • 2 cups fresh blackberries (plus extra for garnish)

  • 1.5 cups chocolate wafer cookies or chocolate graham crackers, crushed

  • 1/4 cup unsalted butter, melted

  • 1/4 cup blackberry jam (optional)

  • Whipped cream (optional, for topping)

Instructions:

  1. Prepare the crust:
In a medium bowl, combine the crushed chocolate wafer cookies with melted butter. Mix until the texture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even base. Freeze for 15–20 minutes until set.

  2. First layer:
Spread the softened chocolate ice cream over the chilled crust in an even layer. Use a spatula to smooth the top. Freeze for at least 30 minutes or until firm.

  3. Add blackberries and jam (optional):
If using, gently press whole blackberries into the chocolate ice cream layer. Warm the blackberry jam slightly and drizzle it over the top.

  4. Second layer:
Spread the softened blackberry ice cream on top of the first layer. Smooth evenly with a spatula. Freeze for another 2–4 hours, or until fully set.

  5. Finishing touches:
Before serving, let the cake sit at room temperature for about 5 minutes to ease removal. Carefully remove the sides of the springform pan. Top with fresh blackberries and, if desired, a layer of whipped cream.
