Ingredients:

2 salmon fillets

2 medium potatoes, halved

1 bunch of asparagus, tough ends removed

2 tablespoons olive oil

2 garlic cloves, minced

Juice of 1 lemon

1 teaspoon paprika

½ teaspoon black pepper

1 teaspoon salt

½ teaspoon dried oregano

1 tablespoon butter
Instructions:
1. Preheat the Oven:

Preheat your oven to 400°F (200°C).
2. Prepare the Potatoes:

Wash and halve the potatoes.

Place the potatoes cut side down on a baking sheet.

Drizzle with 1 tablespoon of olive oil and season with salt, pepper, and oregano. Toss to coat evenly.

Roast the potatoes in the preheated oven for about 25-30 minutes or until they are tender and golden.
3. Prepare the Asparagus:

While the potatoes are roasting, prepare the asparagus by trimming off the tough ends.

Toss the asparagus with the remaining 1 tablespoon of olive oil, minced garlic, salt, and pepper.

After the potatoes have been in the oven for 25 minutes, add the asparagus to the baking sheet and roast for an additional 10-12 minutes, or until the asparagus is tender.
4. Prepare the Salmon:

While the vegetables are roasting, prepare the salmon fillets.

Drizzle the fillets with lemon juice, paprika, and season with salt and pepper.

Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter.

Once the butter is melted and bubbly, add the salmon fillets, skin side down if applicable. Cook for 3-4 minutes on each side, or until golden and cooked through.
5. Assemble the Dish:

Once the potatoes, asparagus, and salmon are cooked, arrange everything on a serving platter.

Garnish with additional lemon wedges if desired.
