4 ripe but firm pears (such as Bosc or Anjou), halved and cored
1/2 cup goat cheese, softened
1/4 cup dried cranberries
2 tbsp chopped walnuts (optional)
3 tbsp honey, plus more for drizzling
1 tsp cinnamon
Directions:
Preheat oven: Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it.
Prepare the pears: Slice the pears in half and use a spoon or melon baller to scoop out the core and seeds, creating a small hollow. Arrange the pears cut side up in the prepared baking dish.
Stuff the pears: In a small bowl, mix the goat cheese, cranberries, and walnuts (if using). Spoon the mixture into the hollowed-out centers of the pears.
Bake the pears: Drizzle the pears with honey and sprinkle with cinnamon. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the pears are tender and golden.
Serve: Drizzle with additional honey before serving, if desired. These pears are delicious warm, but they can also be served at room temperature.
