1.  Monday: Creamy Garlic Chicken

Ingredients

  • 1 teaspoon Italian herb seasoning, or seasoning blend of choice

  • ½ teaspoon salt, or to taste

  • ¼ teaspoon freshly ground black pepper, or to taste

  • ¼ teaspoon granulated garlic

  • ¼ cup all-purpose flour

  • 2 pounds skinless, boneless chicken thighs

  • 2 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • 8 garlic cloves, or more as needed, peeled and smashed, about 1/4 cup lightly packed

  • 1 cup heavy cream

  • 1 cup chicken broth

  • 1 tablespoon chopped fresh parsley, or as needed (optional)

Directions

  1. Combine herb seasoning, salt, pepper, granulated garlic, and flour in a 1-gallon resealable plastic bag and mix well.

  2. Combine butter and olive oil in a large, nonstick skillet over medium heat. Pat chicken thighs dry with paper towels, place in the bag of seasoned flour, seal, and toss chicken thighs in the flour mixture until evenly coated.

  3. When butter stops sizzling, add chicken pieces and cook until nicely browned, no longer pink at the center and juices run clear, 4 to 5 minutes per side. An instant-read thermometer inserted near the center should read 165 degrees F (74 degrees C). Remove to a plate and keep warm.

  4. Add smashed garlic to the same skillet. Reduce heat to medium-low and cook garlic, stirring frequently, just until fragrant, no longer than 1 minute.

  5. Add cream to the skillet, and stir up any browned bits in the bottom of the pan. Stir in chicken broth. Increase heat to medium, and bring the sauce to a boil, stirring occasionally. Cook until the sauce is reduced by half, about 10 minutes.

  6. Sample garlic cream sauce and adjust seasoning, if necessary. Return chicken to the skillet and stir in any accumulated juices. Allow chicken to heat through. Garnish with fresh parsley and serve.

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).

  2. Stir harissa paste, honey, olive oil, minced garlic, cumin, coriander, salt, and pepper together in a bowl. Rub the mixture over each chicken thigh and under the skin, ensuring each thigh is coated evenly. Place chicken thighs skin-side up in a baking dish.

Ingredients

  • 1 cup low-sodium soy sauce

  • 1/4 cup sake

  • 3 tablespoons rice vinegar

  • 1/3 cup brown sugar, or more to taste

  • 1 tablespoon white sesame seeds

  • 1/4 teaspoon crushed red pepper

  • 2 teaspoons canola or peanut oil

  • 1 teaspoon toasted sesame oil

  • 1 teaspoon kosher salt

  • 1/2 teaspoon freshly ground black pepper

  • 2 pounds boneless skinless chicken thighs, cut into 1 ½ inch pieces

  • 2 teaspoons grated fresh ginger

  • 1 teaspoon finely minced garlic

  • 1 bunch green onions, thinly sliced, divided

  • 1 ½ cups cooked rice

Directions

  1. Combine soy sauce, sake, rice vinegar, and brown sugar in a bowl and whisk well until sugar is dissolved.  Stir in sesame seeds and crushed red pepper and set aside.

  2. Heat oils in a large skillet over high heat. Sprinkle salt and pepper evenly over chicken. Add chicken in a single layer to the skillet and cook, undisturbed until chicken is browned and releases easily from the pan, 4 to 6 minutes. Flip chicken pieces, cook 1 more minute and remove from pan; set aside.

  3. Reduce heat to medium and add ginger and garlic. Cook, stirring constantly, until fragrant, about 1 minute. Reserve 2 tablespoon of the green onions for garnish and add remaining green onions to the skillet. Cook for 1 minute. Add 1 cup reserved soy sauce mixture to the skillet and stir with a wooden spoon, scraping up any browned bits from the bottom of the skillet.  Bring mixture to a boil and cook until sauce has reduced by about a third or until slightly thickened and glossy.

  4. Return chicken to the skillet and cook, stirring occasionally, until sauce is thickened slightly and chicken is coated in the sauce and cooked through.  Serve over rice and sprinkled with reserved green onions.
